Sunday & Monday nights are always a busy time for me. (i usually do my chores scattered between both nights!) i like to get ready for the week in the kitchen by preparing foods. this usually means chopping & slicing veggies so they are easy to grab. it also means cooking in bulk. i usually pick an easy dinner to make during chore night that usually includes some of the same duties i need to complete for my weekly preparation. for instance, last night i sent my wonderful boyfriend on grill duty. we were having grilled salmon for dinner. so the day before, i marinated chicken breasts (two in a sesame ginger dressing and two in an Italian dressing). since my boyfriend was already going to grill, i had him cook up the chicken.
now this chicken will be the easy staple to many of my weekly meals! while he was busy grilling, i was in the kitchen getting core basic items ready: i steamed a pound of green beans (some we had for dinner and the rest went into 3-bean quinoa salad i will get to in a minute!), i chopped peppers, drain and defrost beans, and made some quinoa.

i substituted kidney beans for garbanzo beans and omitted the tarragon. after making this easy salad, i put them in one serving size containers. next, i added the two Italian marinated grilled chicken breasts, sliced, on top of each serving. lastly, i topped it off with some goat feta cheese. these will keep all week and will be a light but filling, healthy & quick lunch!
i will use the second pair of marinated chicken breasts for Chinese chicken salads later this week.
prepping beforehand can be extremely useful, saves time AND money, and relieves stress!

there is too much alcohol in this drink? i didn't even know that there was alcohol in it...but that totally makes sense for causing me much hangover relief. but where will i get my glorious magical elixir now?!?
