as i previously mentioned in yesterday's post...i like to prep myself for the long work week, making ingredients and meals ahead of time.
while i was in the kitchen, my boyfriend grilled 4 chicken breasts on Monday night. i used one of the chicken breasts to add additional protein to our Tuesday lunch: 3-bean quinoa salad topped with grilled Italian marinated chicken & goat feta cheese.
now i used the second two chicken breasts, marinated in a sesame ginger dressing, for today's lunch, which i prepared last night: oriental chicken salad!
my oriental chicken salads consist of the following delicious ingredients (makes 2 big salads):
(*all of the ingredients have been divided between two salads)
- 1 bag of romaine lettuce
- 1/2 cabbage thinly sliced
- 1 shredded carrrot
- mandarin oranges (1 can drained)
- 1/4 cup of sliced red onion
- 1 cup of thawed edamame
- chow mein noodles
- paul newman's sesame ginger dressing
all of this was easy to do, healthy, and will make for a great lunch!
